- 4 cups fine bulgur
- 2 onions
- 2 cloves of garlic
- 3 tablespoons tomato paste
- 4 tablespoons pepper paste
- 3 tablespoons vegetable oil
- 3 teaspoons salt
- 2 teaspoons chili flakes
- 1 teaspoon ground red pepper
- 1.5 tablespoons isot (Urfa pepper)
- Fresh green onions
- Parsley
Place the bulgur, tomato and pepper pastes, and spices into a large kneading bowl.
Grate the onions and garlic or process them into a puree using a blender.
Add the onion and garlic puree to the other raw köfte ingredients in the bowl.
Pour 2 tablespoons of vegetable oil on top and start kneading the mixture.
Knead until the bulgur blends well with all the ingredients.
Then sprinkle a little water on the mixture (or wet your hands) and continue kneading until the mixture reaches the proper consistency and color. (Add water little by little as it dries out.)
Once you feel the mixture has softened, taste it.
You can adjust the seasoning according to your taste.
Finally, add the chopped parsley and green onions to the mixture and knead one last time together.
When kneading is complete, take small portions in your hand and shape the köfte by pressing and squeezing.
Garnish with greens and lemon slices, and serve with Lavalia lavash.
